About the Project 

The wait is over. Natural Selection Brewing is back with a one-of-a-kind release for 2025.

Each year, four MSc Brewing and Distilling students from Heriot-Watt University take on the challenge of creating an original beer in collaboration with Stewart Brewing. Over the years, NSB has pushed the boundaries of flavour and creativity, brewing everything from punchy red ales and rustic saisons to refreshing wheat beers and sharp sours, and NSB XIII is going to be no exception.  

This year’s beer fuses classic brewing tradition with bold new flavours, promising to deliver a beer that’s as drinkable as it is distinctive. From recipe development to branding, sales and live events, NSB XIII is a complete student led operation, and the journey is only just beginning. Keep your eyes on our socials and your glasses at the ready. This one is not to be missed.

Ancestors

Natural Selection Brewing 2011 

In 2011, Finch became the first-ever incarnation of this project. A 6.5% hoppy red ale: nutty, chocolatey, caramel, and vanilla body with a fruity and floral flourish from the Chinook and Amarillo hops which lead to a dry, go-back-for-more finish.

Natural Selection Brewing 2012 

Back in 2012, Kevin, Damon, Colin, and Stephen brewed Anorak, a naturally cloudy, hoppy summer wheat beer. With low bitterness and a citrusy zing, this beer was the perfect thirst quencher.

Natural Selection Brewing 2013 

This year’s release was a New World Saison called Origin. This crisp, dry and fruity beer had a pronounced hop characteristic from the galaxy hops, and a unique taste from the rye and Saison yeast.

Natural Selection Brewing 2014 

In 2014, Ben, Jonny, Amaey, Doug, and Craig brought Mutiny on the Beagle, an English IPA, to market.Initial flavours of orange and strawberries gave way to resin and pine notes and a unique lime cordial note. Clean malt backbone with some toffee flavours.

Natural Selection Brewing 2015 

In 2015, Reade, Rich, Sarah and Sam brewed an American ESB called Bitter Descent. The British bitter journeyed far. It evolved, loyal to its balanced roots but more hop-forward. This year’s beer was an extra special bitter amped-up to American proportions. All-British malts, all-American hops, a beer of bitter descent.

Natural Selection Brewing 2016 

In 2016, Euan, Dulcie, Jonny, and Tanya brought Volcan Wolf, a Black Berliner Weisse, to market. This tart & dark yet light and refreshing brew was named after the highest peak of the Galapagos. This shield volcano was given the name Wolf in honour of the German naturalist Theodor Wolf.

Natural Selection Brewing 2017

In 2017, Patrick, Phil, Luis, and Mark created Common Ancestor, a crisp and refreshing California Common. Brewed with Chinook and Dr. Rudi hops, the spice and pine notes of this medium-bodied lager/ale hybrid were complemented with a delicate late infusion of Juniper berries. In addition to Common Ancestor, they brewed a small-batch Belgian Quadrupel called Aged Ancestor aged in sherry barrels. With ageing comes strength, wisdom and character!

Natural Selection Brewing 2018 

In 2018, Gregor, Sean, and Cameron brought to you the Divergence pilsner. The divergence of species has occurred over millions of years, branching off over time into a diverse array of life that makes up the world around us. With this pilsner, they made a beer of Bohemian origin, but with a divergence of the style using British grain and Polish hops resulting in a smooth bitterness, brilliant gold colour, and delicate malt profile.

In addition they also made a small-batch brew called Evolution, a wee heavy that was aged in a first-fill, ex-sherry Scotch-whiskey barrel. This allowed for the smooth vanilla, oak, and red fruit flavours to develop and round out the dark sugar and caramel notes of the wee heavy base.

Natural Selection Brewing 2019 

Brewed for The Altruist in you. This beer was created keeping in mind minimised environmental impact by sourcing local ingredients, using 100% recyclable or compostable packaging and offsetting our carbon emissions by planting native Scottish trees. The Altruist was a sour wheat beer pouring a hazy magenta hue with a delightful forest fruit aroma. Balanced by a puckering sourness and thetartness of the berries, a subtle malt base and light wheat body combined to form a refreshing, flavourful beer.

Natural Selection Brewing 2020 

Kelsey, Joel, Michael, and Nipun were chosen to represent the 10th instalment of Natural Selection Brewing, although the project sadly had to be cancelled in the face of the rapidly worsening Covid-19 pandemic. It’s worth emphasising that the beer the team were able to put out prior to lockdown was exceptionally well received, defying science to create a honeycomb white milk stout which remained completely vegan due to the lack of actual honey or milk. 

Natural Selection Brewing 2022 

The 2022 team of Amartya, Rita, Oli, and George released Buck Wild: a traditional Belgian Witbier boasting a local twist of sea buckthorn. Delivering zesty citrus, a soft body and supreme refreshment, it was the ultimate summer beer!

Natural Selection Brewing 2023 

In 2023, Cory, Doch, Merritt and Pippa proudly presented Pump up the Bram, a farmhouse style ale, fruited with Brambles (aka blackberries) harvested from the vibrant and majestic hills of Scotland. A funky, fruity, and crushable summer beer, Pump up the Bram was best enjoyed at the pub with your mates, at a lively event, at home, or caught in a bramble thicket somewhere!
