Our second Project 7 release of 2025 is here, and it’s an absolute carnival in a can. Introducing Copa Caledonia, a vibrant Catharina Sour that fuses Brazil's spirit with Scotland's bold character.
What’s in a Name?
The name Copa Caledonia was inspired by the energy and flair of the 2014 Rio World Cup, a tournament that brought football, colour, and celebration to the global stage. We channelled that same energy into this beer. Think samba, sunshine, and citrus, with a distinctly Caledonian twist. For the artwork, we sent our 2025 Project 7 Resident Artist, Penfold, a splash of Rio Carnival inspiration: bright colours, feathers, street party vibes, and what came back couldn’t have been more perfect.
A Scottish Take on a Brazilian Style
The Catharina Sour is Brazil’s first truly recognised craft beer style, a fruit-forward, kettle-soured beer born in Santa Catarina. Traditionally bursting with tropical fruits like passionfruit or guava, we’ve given the style a tart Scottish makeover by adding Scottish Tayberries and Honeyberries. The result? A juicy, vibrant sour packed with berry character and a refreshingly crisp finish.
Tayberries bring an intense raspberry-meets-blackberry hit, while Honeyberries add a complex layer of tartness, jamminess and depth that balances the acidity beautifully. It’s bright, juicy, and just the right amount of wild.

Copa Caledonia is the second release in this year’s Project 7 series, our playground for creativity, one-off beers, and flavour experimentation. These are beers brewed in limited batches with bold ideas, unusual styles, and standout ingredients, the kind of beers that don’t play by the rules (and don’t hang around for long).
