Who was george forrest?

George Forrest was a great plant hunter, a true pioneer of the 20th Century. Over 28 years, Forrest led seven valiant expeditions to the exotics of Yunnan, China, to discover and collect new plants.

George's Legacy

Though these trips were fraught with danger, they became heroic tales of bravery and adventure. Forrest brought back over 30,000 specimens, hundreds of which are still in cultivation today and flourish in many gardens.

Locally Grown Botanicals

We carefully combined seven locally-grown botanicals, including two of Forrest’s own discoveries, and every batch is distilled just 1.5 miles from where his home cottage still stands in Loanhead, Scotland.

Hemerocallis Forrestii
A dwarf day lily with golden yellow edible flowers that add a subtle floral note.


Sorbus Forrestii
With masses of white berries and pink tips in Autumn the sorbus give us a little bitterness and berry tang.

Juniper - Known for its sweet, peppery fragrance. Provides
pine and resinous flavours, it’s wouldn’t be gin without it.

Coriander Seed – The second most important botanical after
juniper, adding a complex flavour of citrus and a little spice.

Angelica Root - The master of providing the aromatic for
gin. It’s earthy and deep flavours carry its herbal tones through the nose.

Winter Savory - This delicate herb of happiness adds a savoury herbaceous note to our gin. Subtle but pairs perfectly with the peppery juniper.

Lemon Verbena - With its fragrant lemon sweetness, these leaves provide a punchy lemon and line burst to our gin.

Perfect Serves

Classic G&T

Fill your glass with cubed ice

Add 50ml of The Collector Gin

Add 100-125ml of chilled premium tonic

Gently stir, garnish with a slice of lime and blueberries

George's Daiquiri

Pour into a shaker filled with ice:

50ml of The Collection Gin

50ml Gooseberry Juice

25ml of Simple Syrup

15ml of Fresh Lime Juice

Shake well and strain into a chilled class.

Garnish with lime.

Sour Exploration

Muddle 6 blueberries in a mixing glass

Add 50ml of The Collector Gin

Add 25ml of Fresh Lemon Juice, 15ml of Honey Syrup and shake vigorously for 15 seconds.

Fine strain into a glass over fresh ice

Garnish with lemon peel
