With masses of white berries and pink tips in Autumn the sorbus give us a little bitterness and berry tang.

Juniper - Known for its sweet, peppery fragrance. Provides
pine and resinous flavours, it’s wouldn’t be gin without it.
Coriander Seed – The second most important botanical after
juniper, adding a complex flavour of citrus and a little spice.
Angelica Root - The master of providing the aromatic for
gin. It’s earthy and deep flavours carry its herbal tones through the nose.

Winter Savory - This delicate herb of happiness adds a savoury herbaceous note to our gin. Subtle but pairs perfectly with the peppery juniper.
Lemon Verbena - With its fragrant lemon sweetness, these leaves provide a punchy lemon and line burst to our gin.
